Our day-to-day Process
1st step is always about cleanliness. We wash chicken with double purified water with a high pressure spraying tray.
Next, after washing, we take only what we need, the Boneless meat. We spend the huge time here with loads of precision and focused mind.
Once we get the boneless meat, we again wash them before marination. And here it comes, the magic hands of our Chef, Al Taza's magic happens here.
Then the marinated meat will be arranged and stacked on to the shawarma stick accordingly.
Now it's time to pack and seal all the shawarma pits in a well and neat way which can be trasported to all outlets.
All the pits are kept on the rolley tray and shifted to the freezer vehicle which take all of them to our outlets.
The Indo-Arabic masala is marinated and we process around 2500 kg of meat everyday. A kitchen which is operating 15 hours a day with 30 staffs working on different departments.
And Yes, this is the Base of Al Taza.
Except the Ruali roti which is prepared at each outlets, the mayonnaise which is made at outlets, the shawarma serving process done at outlets, the meat cooking process is done at outlets, the pickled veggies done at outlets, we still believe the core and heart of
Al Taza is our CENTRAL KITCHEN.
